Wisconsin’s Cornucopia Recipe Challenge

The Wisconsin Ag in the Classroom (AITC) Program sponsored the 2009 Wisconsin Cornucopia Recipe Challenge at the Wisconsin State Fair. Exhibitors had to create a recipe using as many Wisconsin products (i.e. produce, meat, grain, dairy) as they could. A maximum of 12 ingredients were allowed to create the award winning recipe. Exhibitors had to include a supporting document stating why Wisconsin grown produce, meats, grains, dairy, etc are the key to an award winning recipe. This was the second year Wisconsin AITC sponsored the contest.

The three winners were: 1st- Beth Campbell, Belleville, WI – Pinwheel Asparagus Ring; 2nd- Elaine Mason, Oconomowoc, WI – “Pan” Cakes ala Mode; 3rd – Lisa Kivirist, Browntown, WI – Wisconsin Melting Pot Cheese Soup.
